
The Secret to the Perfect Crunch: How IR Heating Actually Works
Ever wonder why some oven meals come out soggy on the bottom but burnt on top? It’s because convection alone just can’t do the heavy lifting. To get that perfect, golden-brown crust while the inside stays juicy, we use shortwave infrared (IR) heaters. Think of it as a shortcut. Instead of waiting for hot air to slowly warm up the food, IR emitters send energy straight through the surface. It hits the water molecules deep inside the food and gets them moving.
Why wavelength matters
Here is the trick: the wavelength of the IR light determines how deep the heat goes. We use shortwave IR because it doesn’t just stop at the skin. It dives deeper into the food before it gets absorbed. This means you don’t end up with a charred exterior and a raw center. When you mix that with a bit of steam, the moisture helps pull the heat even further in. It’s a winning combo. You get a fast, satisfying sear and a center that’s cooked exactly right.
The nuts and bolts (and the trade-offs)
We use quartz envelopes with tungsten filaments for our lamps. We chose quartz because it lets the heat pass through easily and doesn’t crack when the temperature swings wildly from cold to hot. We push these for high power density, so the oven ramps up and gets hot fast. But, you have to be careful with your power. These tubes pull a lot of juice. If your wiring is too thin, you’ll see a voltage drop, and your heat output will dip right when you need it most. Also, these things getstinging hot. We make sure the lamps are shielded so food doesn’t touch the quartz—because if it does, the lamp will likely shatter.
Keeping it running
We designed these as drop-in replacements. It keeps the footprint small and makes swapping them out a breeze. The biggest thing to watch? Alignment. If the lamps are even slightly tilted or crooked, you’re going to get hot spots on your tray. Everything needs to be straight to get a uniform cook. One last tip: every 2,000 hours or so, take a look at the connectors. If they start to oxidize, you risk an arc-over, which is a fancy way of saying the lamp will burn out way sooner than it should. A quick check now saves a headache later.
